Ingredients

- 2 cups grated zucchini
- 1 cup almond flour
- 1/2 cup shredded mozzarella cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 tablespoon dried herbs (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Squeeze the grated zucchini in a clean cloth to remove excess moisture.
- Combine the zucchini, almond flour, mozzarella cheese, eggs, baking powder, garlic powder, onion powder, salt, and herbs in a bowl. Mix until well combined.
- Shape the mixture into bagel shapes and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until they are golden brown.
- Allow to cool slightly before serving.
Notes
These bagels can be topped with cream cheese or used for sandwiches. Store properly to maintain freshness.
