Description

Delicious and healthy zucchini bagels that are low in carbs and easy to make.


Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup shredded mozzarella cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 tablespoon dried herbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Squeeze the grated zucchini in a clean cloth to remove excess moisture.
  3. Combine the zucchini, almond flour, mozzarella cheese, eggs, baking powder, garlic powder, onion powder, salt, and herbs in a bowl. Mix until well combined.
  4. Shape the mixture into bagel shapes and place them on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until they are golden brown.
  6. Allow to cool slightly before serving.

These bagels can be topped with cream cheese or used for sandwiches. Store properly to maintain freshness.
