Ingredients

  • 4 cups vegetable broth

  • 3 cloves garlic, minced

  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent.
  2. Add crushed tomatoes and vegetable broth to the pot. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  3. Add cheese tortellini to the pot and cook according to package instructions until tender.
