- 4 cups vegetable broth

- Fresh basil for garnish
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent.
- Add crushed tomatoes and vegetable broth to the pot. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Add cheese tortellini to the pot and cook according to package instructions until tender.
- Once the tortellini is cooked, stir in grated Parmesan cheese until melted and well combined.
- Serve hot, garnished with fresh basil.
