Description

A delicious and moist cake combining the goodness of oats and apples, perfect for a healthy snack or breakfast option.


Ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 2 apples, peeled and chopped
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup nuts or raisins (optional)
  • 2 eggs (or flax eggs for vegan option)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a cake pan.
  2. In a large bowl, mix together the oats, baking powder, baking soda, cinnamon, and salt.
  3. Combine the applesauce, honey, melted coconut oil, and eggs in another bowl. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples and nuts or raisins if using.
  5. Pour the batter into the prepared cake pan and spread it evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before slicing and serving.

Notes

For added sweetness, you can add a few extra tablespoons of honey or maple syrup. Experiment with spices such as nutmeg or ginger for additional flavor.
