Ingredients

- 2 cups rolled oats
- 1 cup unsweetened applesauce
- 2 apples, peeled and chopped
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup nuts or raisins (optional)
- 2 eggs (or flax eggs for vegan option)
Instructions
- Preheat the oven to 350°F (175°C). Grease a cake pan.
- In a large bowl, mix together the oats, baking powder, baking soda, cinnamon, and salt.
- Combine the applesauce, honey, melted coconut oil, and eggs in another bowl. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples and nuts or raisins if using.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
For added sweetness, you can add a few extra tablespoons of honey or maple syrup. Experiment with spices such as nutmeg or ginger for additional flavor.
