- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1/2 cup sour cream
- Salt and pepper to taste
- Chives for garnish
Instructions
- Place diced potatoes, chopped onion, and minced garlic into the slow cooker. Pour chicken broth over the top.
- Cook on low for 360 minutes or high for 240 minutes until potatoes are tender.
- Add cream cheese and stir until melted and well combined.
- Stir in cheddar cheese, bacon, and sour cream.
- Season with salt and pepper to taste.
- Serve warm, garnished with chives.
Notes
For a thicker soup, mash some of the potatoes before adding cream cheese. Customize with veggies like corn or green onions.
