Description

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Place diced potatoes, chopped onion, and minced garlic into the slow cooker. Pour chicken broth over the top.
  2. Cook on low for 360 minutes or high for 240 minutes until potatoes are tender.
  3. Add cream cheese and stir until melted and well combined.
  4. Stir in cheddar cheese, bacon, and sour cream.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with chives.

Notes

For a thicker soup, mash some of the potatoes before adding cream cheese. Customize with veggies like corn or green onions.
