Description

A rich and creamy side dish that combines the flavors of cream and cheese with healthy spinach.


Ingredients

Scale
  • 1 pound fresh spinach or 10 ounces frozen spinach
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream or milk
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)

Instructions

  1. If using fresh spinach, wash and stem the leaves. Cook the spinach in boiling water for 2-3 minutes until wilted. Drain and chop. If using frozen spinach, thaw and squeeze out the excess moisture.
  2. In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute to form a paste.
  3. Gradually whisk in the cream or milk, stirring until the mixture thickens.
  4. Add the chopped spinach and Parmesan cheese to the sauce. Stir well to combine.
  5. Season with salt, pepper, and nutmeg if desired.
  6. Cook for an additional 2-3 minutes until heated through. Serve warm.

Notes

For extra flavor, add minced garlic while cooking the butter and flour. A splash of lemon juice before serving can brighten the dish.
