Description
A rich and creamy side dish that combines the flavors of cream and cheese with healthy spinach.
Ingredients

- 1 pound fresh spinach or 10 ounces frozen spinach
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream or milk
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- A pinch of nutmeg (optional)
Instructions
- If using fresh spinach, wash and stem the leaves. Cook the spinach in boiling water for 2-3 minutes until wilted. Drain and chop. If using frozen spinach, thaw and squeeze out the excess moisture.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute to form a paste.
- Gradually whisk in the cream or milk, stirring until the mixture thickens.
- Add the chopped spinach and Parmesan cheese to the sauce. Stir well to combine.
- Season with salt, pepper, and nutmeg if desired.
- Cook for an additional 2-3 minutes until heated through. Serve warm.
Notes
For extra flavor, add minced garlic while cooking the butter and flour. A splash of lemon juice before serving can brighten the dish.
