Description

Ingredients

  • 1 lb chorizo sausage
  • 8 large eggs
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup spinach, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chorizo in a skillet over medium heat until browned.
  3. Add the diced onion and bell pepper, cooking until softened.
  4. Incorporate the chopped spinach until wilted.
  5. Whisk together the eggs in a bowl, seasoning with salt and pepper.
  6. Combine the egg mixture with the chorizo and vegetable mixture in the skillet.
  7. Start cooking on the stovetop until the edges begin to set.
  8. Bake in the oven for 15-20 minutes or until the eggs are fully set.
  9. Serve warm, optionally with fresh herbs or avocado.
