- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup cheese (cheddar or your choice)
- Salt and pepper to taste
- Cooking spray or oil for the muffin tin
Instructions
- Preheat your oven to 375°F (190°C) and spray a muffin tin with cooking spray or lightly oil it.
- Whisk together the eggs in a large bowl.
- Stir in the chopped spinach, bell pepper, onion, cheese, salt, and pepper until well combined.
- Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake for 15-20 minutes, or until the egg bites are set and lightly golden on top.
- Let them cool slightly before removing from the tin. Serve warm or store for later.
Notes
These can be stored in an airtight container in the fridge for up to a week, or frozen for three months. Reheat before serving.
