An incredibly comforting Vegetable Casserole packed with wholesome mixed vegetables, tender rice, and gooey melted cheese, perfect for family gatherings or weeknight dinners.
Ingredients

- 2 cups mixed vegetables (such as carrots, broccoli, and cauliflower)
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup bread crumbs (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the mixed vegetables, cooked rice, shredded cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Mix well until all ingredients are evenly coated.
- Pour the mixture into a greased baking dish.
- Add breadcrumbs on top if using.
- Bake in the preheated oven for 30-35 minutes or until hot and bubbly.
- Cool slightly before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to two months.
