Description

An incredibly comforting Vegetable Casserole packed with wholesome mixed vegetables, tender rice, and gooey melted cheese, perfect for family gatherings or weeknight dinners.


Ingredients

Scale
  • 2 cups mixed vegetables (such as carrots, broccoli, and cauliflower)
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup bread crumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the mixed vegetables, cooked rice, shredded cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Mix well until all ingredients are evenly coated.
  4. Pour the mixture into a greased baking dish.
  5. Add breadcrumbs on top if using.
  6. Bake in the preheated oven for 30-35 minutes or until hot and bubbly.
  7. Cool slightly before serving.
