Description

A nutritious twist on traditional lasagna, using zucchini for lower carbs and ground turkey for reduced fat.


Ingredients

Scale
  • 3 medium zucchinis
  • 1 pound ground turkey
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  4. Add ground turkey, season with salt, pepper, and Italian seasoning, and cook until browned.
  5. In a bowl, mix ricotta cheese, egg, and a pinch of salt and pepper.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Layer zucchini strips, followed by the turkey mixture, ricotta mixture, and mozzarella cheese.
  8. Repeat layers, finishing with marinara sauce and mozzarella on top.
  9. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly and golden.
  10. Let it cool for a few minutes before slicing and serving.

Notes

Use a mandoline slicer for even zucchini strips and sweat the zucchini before layering to avoid a watery lasagna.
