Description
A nutritious twist on traditional lasagna, using zucchini for lower carbs and ground turkey for reduced fat.
Ingredients

- 3 medium zucchinis
- 1 pound ground turkey
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add ground turkey, season with salt, pepper, and Italian seasoning, and cook until browned.
- In a bowl, mix ricotta cheese, egg, and a pinch of salt and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer zucchini strips, followed by the turkey mixture, ricotta mixture, and mozzarella cheese.
- Repeat layers, finishing with marinara sauce and mozzarella on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
Use a mandoline slicer for even zucchini strips and sweat the zucchini before layering to avoid a watery lasagna.
