- 2 pounds turkey breast, pounded flat
- 1 cup spinach, chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
- Kitchen twine for tying
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the chopped spinach, ricotta cheese, grated Parmesan, sun-dried tomatoes, minced garlic, and a pinch of salt and pepper in a bowl.
- Lay the pounded turkey breast flat on a cutting board.
- Spread the spinach mixture evenly over the meat.
- Starting from one end, roll the turkey tightly into a log.
- Place the rolled turkey in a baking dish and drizzle olive oil over the top.
- Bake for 35-40 minutes or until the internal temperature reaches 165°F (74°C).
- Let the roulade rest for 10 minutes before slicing.
