Delightful bites of creamy cheesecake infused with fresh strawberry purée on a crunchy graham cracker crust.

- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 cup fresh strawberries, pureed
- 1/2 cup freeze-dried strawberries, crushed
Instructions
- Make the Graham Cracker Crust: In a bowl, mix the graham cracker crumbs with melted butter until combined. Press the mixture into the bottom of a greased muffin tin to form a crust.
- Whip the Cream Cheese Filling: In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Fold in the Whipped Cream: Gently fold in the whipped cream until well combined. Our goal is to keep that fluffy texture!
- Fill with Cheesecake Mixture: Spoon the cheesecake mixture over the crusts in the muffin tin, filling them about 3/4 full.
- Swirl in the Strawberry Puree: Drizzle the strawberry puree over the cheesecake and swirl it with a knife for a marbled effect, creating beautiful patterns!
- Add the Crunchy Topping: Top each bite with crushed freeze-dried strawberries for that extra crunch and flavor oomph.
- Chill to Set: Refrigerate for at least 120 minutes or until set.
- Serve with Joy: Carefully remove the bites from the tin and serve chilled!
