Description

A hearty breakfast sandwich featuring smoky shredded tofu, creamy avocado, and fresh greens, perfect for a nourishing start to your day.


Ingredients

Scale
  • 1 block of firm tofu
  • 2 tablespoons soy sauce
  • 1 teaspoon liquid smoke
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices of bread
  • 2 avocados
  • Fresh spinach or arugula
  • Optional toppings: hot sauce, tomatoes, or nutritional yeast

Instructions

  1. Drain the tofu well to rid it of excess moisture.
  2. Prepare the marinade by mixing soy sauce, liquid smoke, smoked paprika, salt, and pepper.
  3. Sauté the crumbled tofu in olive oil for 5-7 minutes.
  4. Toast the slices of bread until golden brown and crisp.
  5. Mash the avocados and season with salt.
  6. Assemble the sandwich starting with mashed avocado on one slice.
  7. Add smoky tofu mixture and fresh spinach or arugula.
  8. Serve warm and enjoy!

Notes

For a gluten-free version, use gluten-free bread. You can experiment with different spices and toppings for more flavor.
