Description

A comforting and aromatic bowl of shrimp pho noodle soup that transports you to Vietnam with every slurp.

Ingredients

Scale
  • 8 oz rice noodles
  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken or seafood broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Fresh herbs (basil, cilantro, mint)
  • Bean sprouts
  • Lime wedges
  • Sliced chili (optional)

Instructions

  1. Cook the Rice Noodles: Cook rice noodles according to package instructions and set aside.
  2. Sauté Aromatics: In a pot, heat a little oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant, about 2-3 minutes.
  3. Prepare the Broth: Pour in the broth, fish sauce, soy sauce, lime juice, and sugar. Bring to a simmer, stirring occasionally to combine all the flavors.
  4. Cook the Shrimp: Add the shrimp and cook for 2-3 minutes until they are pink and opaque. Be careful not to overcook them; they should be tender and juicy.
  5. Assemble the Noodles: Divide the cooked rice noodles into bowls. This creates a delightful base for our flavorful broth.
  6. Ladle in the Broth: Ladle the hot broth and shrimp over the noodles, ensuring each bowl is full of that delicious soup.
  7. Garnish with Freshness: Top with fresh herbs, bean sprouts, and sliced chili if using. The fresh herbs add an incredible burst of flavor that makes each bite special.
  8. Serve with Lime: Serve with lime wedges on the side for an extra zest. The splash of lime juice brightens the entire dish!

Notes

For perfectly cooked shrimp, watch them closely while they cook; they only need a few minutes to become tender.
