- 1 pound large shrimp, peeled and deveined
- 1 pound baby potatoes, halved
- 1 pound corn on the cob, cut into pieces
- 1/2 cup smoked sausage, sliced
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon Old Bay seasoning
- Salt and pepper, to taste
- Lemon wedges, for serving
- Chopped parsley, for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the baby potatoes with 2 tablespoons of olive oil, Old Bay seasoning, salt, and pepper on a large sheet pan.
- Roast the potatoes for 20 minutes.
- Add corn, sausage, and remaining olive oil, tossing to combine. Roast for another 10 minutes.
- Finally, add the shrimp and garlic, tossing everything together. Roast for an additional 8-10 minutes until shrimp are cooked through.
- Serve with lemon wedges and garnish with parsley.
