Ingredients

  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage, breaking it apart as it cooks for 5-7 minutes until browned.
  3. Add the sliced bell pepper, zucchini, and red onion, and sauté for another 5-7 minutes until tender.
  4. Toss in the spinach and stir until it wilts, about 2 minutes.
