Description

Ingredients

  • Pasta (your choice)
  • Zucchini
  • Bell peppers
  • Cherry tomatoes
  • Red onion
  • Feta cheese
  • Olive oil
  • Garlic
  • Salt
  • Pepper
  • Basil or parsley (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the zucchini, bell peppers, cherry tomatoes, and red onion into bite-sized pieces.
  3. Toss the vegetables with olive oil, minced garlic, salt, and pepper.
  4. Spread the vegetables on a baking sheet in a single layer and roast for about 20-25 minutes.
  5. Cook the pasta according to package instructions.
