- 2 pounds baby potatoes
- 8 ounces feta cheese
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) so it’s hot and ready for our potatoes.
- Wash the baby potatoes thoroughly and cut them in half.
- Toss the halved potatoes with olive oil, minced garlic, oregano, salt, and pepper.
- Spread the seasoned potatoes out on a baking sheet, placing the feta cheese in the center.
- Bake for about 30-35 minutes, or until the potatoes are golden and crispy.
- Garnish your dish with fresh parsley before serving.
Notes
Store any uneaten potatoes in an airtight container in the fridge for up to 3 days. Reheat gently in the oven for crispiness.
