Description

A comforting dish that combines crispy roasted potatoes with creamy, tangy feta and aromatic garlic, perfect for any gathering.


Ingredients

  • 2 pounds baby potatoes
  • 8 ounces feta cheese
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) so it’s hot and ready for our potatoes.
  2. Wash the baby potatoes thoroughly and cut them in half.
  3. Toss the halved potatoes with olive oil, minced garlic, oregano, salt, and pepper.
  4. Spread the seasoned potatoes out on a baking sheet, placing the feta cheese in the center.
  5. Bake for about 30-35 minutes, or until the potatoes are golden and crispy.
  6. Garnish your dish with fresh parsley before serving.

Notes

Store any uneaten potatoes in an airtight container in the fridge for up to 3 days. Reheat gently in the oven for crispiness.
