- 1.5 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup white chocolate, melted
- 1 cup raspberries
- 1/4 cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs and melted butter. Mix until combined, and then press the mixture firmly into the bottom of a springform pan to form a solid crust.
- Beat together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the melted white chocolate until fully incorporated.
- Fold in the raspberries gently.
- Pour the filling mixture over the prepared crust.
- Bake in the preheated oven for about 55-60 minutes.
- Let the cheesecake cool completely in the pan for at least 2 hours at room temperature, then refrigerate for at least another 2 hours.
- Before serving, top with a dollop of sour cream and additional raspberries if desired.
Notes
Make sure cream cheese is at room temperature. Store in the refrigerator for up to one week.
