Description

A refreshing and nourishing salad combining quinoa, apples, walnuts, and cranberries, perfect as a side dish or standalone meal.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa: In a medium saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for about 15 minutes or until the water is absorbed. Let it cool completely.
  2. Prepare the salad base: In a large bowl, combine the diced apples, walnuts, dried cranberries, red onion, and parsley.
  3. Whisk the dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, and season with salt and pepper.
  4. Mix it all together: Add the cooled quinoa to the large bowl and pour the dressing over the salad. Toss everything together gently.
  5. Serve or chill: Serve immediately or allow to chill in the refrigerator for about 30 minutes.
