A healthy, filling salad that’s perfect for meal prep, packed with protein from chicken, eggs, and bacon.
Ingredients

- 2 cups mixed greens
- 1/2 cup cooked chicken, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, diced
- 1/4 cup blue cheese, crumbled
- 2 hard-boiled eggs, sliced
- 1/4 cup bacon, cooked and crumbled
- 1/4 cup cucumbers, diced
- 1/4 cup red onion, thinly sliced
- Dressing of choice (e.g., vinaigrette or ranch)
Instructions
- In a mason jar, layer the ingredients starting with the dressing at the bottom.
- Add the cucumbers, red onion, chicken, cherry tomatoes, avocado, blue cheese, hard-boiled eggs, and mixed greens in that order.
- Seal the jar and shake before serving.
- Enjoy your hearty and fresh lunch!
Notes
Store in the refrigerator for up to three days. Add dressing just before eating if storing for more than a day to prevent wilting.
