A healthy, filling salad that’s perfect for meal prep, packed with protein from chicken, eggs, and bacon.


Ingredients

Scale
  • 2 cups mixed greens
  • 1/2 cup cooked chicken, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 cup blue cheese, crumbled
  • 2 hard-boiled eggs, sliced
  • 1/4 cup bacon, cooked and crumbled
  • 1/4 cup cucumbers, diced
  • 1/4 cup red onion, thinly sliced
  • Dressing of choice (e.g., vinaigrette or ranch)

Instructions

  1. In a mason jar, layer the ingredients starting with the dressing at the bottom.
  2. Add the cucumbers, red onion, chicken, cherry tomatoes, avocado, blue cheese, hard-boiled eggs, and mixed greens in that order.
  3. Seal the jar and shake before serving.

Notes
