Description

A delightful bread bursting with the sweetness of pineapple, perfect for breakfast or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
  3. Combine in another bowl the drained crushed pineapple, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  6. Allow the bread to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Store bread in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
