- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup crushed pineapple, drained
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mix together the flour, sugar, baking soda, and salt.
- Combine in another bowl the drained crushed pineapple, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
- Allow the bread to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
Notes
Store bread in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
