Ingredients

- 3–4 pounds corned beef brisket
- 4 cups water or beef broth
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 tablespoon black peppercorns
- 3–4 whole cloves
- 2–3 bay leaves
- 1–2 carrots, sliced
- 1–2 potatoes, cubed (optional)
- 1 head of cabbage, cut into wedges (optional)
Instructions
- Place the corned beef brisket in the slow cooker.
- Add water or beef broth to cover the meat.
- Add the onion, garlic, peppercorns, cloves, and bay leaves.
- Cover and cook on low for 8-10 hours or until the meat is fork-tender.
- Add the carrots and potatoes halfway through cooking.
- Add the cabbage in the last 30 minutes.
- Remove the brisket, let it rest, then slice and serve with veggies.
Notes
For best results, use high-quality corned beef and adjust seasonings to taste. Leftovers can be transformed into sandwiches or hash.
