Description

A comforting and tender slow-cooked corned beef brisket infused with savory spices and vegetables.


Ingredients

Scale
  • 34 pounds corned beef brisket
  • 4 cups water or beef broth
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon black peppercorns
  • 34 whole cloves
  • 23 bay leaves
  • 12 carrots, sliced
  • 12 potatoes, cubed (optional)
  • 1 head of cabbage, cut into wedges (optional)

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add water or beef broth to cover the meat.
  3. Add the onion, garlic, peppercorns, cloves, and bay leaves.
  4. Cover and cook on low for 8-10 hours or until the meat is fork-tender.
  5. Add the carrots and potatoes halfway through cooking.
  6. Add the cabbage in the last 30 minutes.
  7. Remove the brisket, let it rest, then slice and serve with veggies.

Notes

For best results, use high-quality corned beef and adjust seasonings to taste. Leftovers can be transformed into sandwiches or hash.
