Description

A delicious and healthy side dish featuring crispy breadcrumbs and cheesy Parmesan, perfect for using up extra zucchinis.


Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis in half lengthwise and scoop out a little bit of the flesh if desired.
