- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs

Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis in half lengthwise and scoop out a little bit of the flesh if desired.
- Combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper in a bowl.
- Drizzle olive oil over the zucchini halves and then sprinkle the breadcrumb mixture evenly on top.
- Place the zucchinis on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes or until the tops are golden brown and the zucchini is tender.
- Garnish with fresh parsley before serving.
Notes
