Instructions
- Combine vegetable broth, minced garlic, diced tomatoes, and Italian seasoning in a large pot. Bring to a boil.
- Add the cheese tortellini and cook according to package instructions until tender, about 2-3 minutes.
- Stir in heavy cream and fresh spinach. Cook for an additional 2-3 minutes until spinach wilts.
- Taste and season with salt and pepper to preference.
