Ingredients

  • 2 cups fresh spinach

  • 1 cup heavy cream
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Combine vegetable broth, minced garlic, diced tomatoes, and Italian seasoning in a large pot. Bring to a boil.
  2. Add the cheese tortellini and cook according to package instructions until tender, about 2-3 minutes.
  3. Stir in heavy cream and fresh spinach. Cook for an additional 2-3 minutes until spinach wilts.
