- 2 cups fresh strawberries (sliced)
- 2 tablespoons sugar (for strawberries)
- Whipped cream (for serving)
Instructions
- Preheat your oven to 425°F (220°C). Grease and flour a baking pan.
- Mix together the flour, sugar, baking powder, and salt in a large bowl.
- Add the cold butter and mix until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined.
- Turn out the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round.
- Cut out rounds using a biscuit cutter and place them on the baking pan.
- Bake for 15-20 minutes or until golden brown.
- Mix the sliced strawberries with 2 tablespoons of sugar and let them sit to release juices while the cakes are baking.
- Slice the shortcakes in half once cooled, layer with strawberries and whipped cream, and serve.
Notes
For the best texture, use cold butter and don’t overmix the dough. Assemble shortcakes just before serving for optimal freshness.
