- 4 medium zucchinis
- 1 pound ground beef
- 1 cup diced tomatoes
- 1/2 cup onion, chopped
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C) while you start preparing the zucchinis.
- Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- In a skillet, heat a splash of olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until soft and aromatic.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Fill each zucchini boat with the beef mixture and arrange them in a baking dish.
- Top each filled boat with a generous handful of shredded cheese.
- Pop the dish in the preheated oven and bake for 20–25 minutes, or until the zucchinis are tender and the cheese is melted.
- Remove from the oven, let cool for a few minutes, and serve hot!

These zucchini boats pair well with a fresh side salad or warm garlic bread. Store leftovers in an airtight container for up to 3 days.
