Description

Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup diced tomatoes
  • 1/2 cup onion, chopped
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) while you start preparing the zucchinis.
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat a splash of olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until soft and aromatic.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
  6. Fill each zucchini boat with the beef mixture and arrange them in a baking dish.
  7. Top each filled boat with a generous handful of shredded cheese.
  8. Pop the dish in the preheated oven and bake for 20–25 minutes, or until the zucchinis are tender and the cheese is melted.
  9. Remove from the oven, let cool for a few minutes, and serve hot!
