Description

Delightful Mediterranean Quesadillas filled with fresh spinach, creamy cheeses, and sautéed red onions, perfect for a quick meal or appetizer.


Ingredients

  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 medium red onion, sliced
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Add the sliced red onion to the skillet and sauté for 3-4 minutes until soft.
  3. Toss in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  4. Layer sautéed spinach and onions on a flour tortilla, followed by feta and mozzarella.
  5. Place another tortilla on top of the cheese mixture.
  6. Gently place the filled quesadilla back into the skillet and cook each side for 3-4 minutes or until golden brown.
  7. Cut the quesadilla into wedges and serve warm.

Notes

For extra flavor, consider adding herbs like oregano or basil or swapping fillings like grilled chicken or mushrooms.
