- 2 cups fresh spinach
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 medium red onion, sliced
- 4 flour tortillas
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat until shimmering.
- Add the sliced red onion to the skillet and sauté for 3-4 minutes until soft.
- Toss in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Layer sautéed spinach and onions on a flour tortilla, followed by feta and mozzarella.
- Place another tortilla on top of the cheese mixture.
- Gently place the filled quesadilla back into the skillet and cook each side for 3-4 minutes or until golden brown.
- Cut the quesadilla into wedges and serve warm.
Notes
For extra flavor, consider adding herbs like oregano or basil or swapping fillings like grilled chicken or mushrooms.
