- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- 1 pound chicken breast, cooked and diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse and prepare the quinoa: In a medium pot, combine quinoa and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed. Once cooked, let it cool slightly.
- Combine the ingredients: In a large bowl, combine the cooked quinoa, diced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss to combine.
- Serve and garnish: Serve warm or cold, garnished with fresh parsley for a touch of color and a burst of herbaceous flavor.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For optimal freshness, don’t mix in the dressing until you’re ready to serve.
