Description

A healthy and tasty salad combining rich salmon and colorful vegetables, perfect for meal prep.


Ingredients

  • 2 cups cooked salmon
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked salmon, mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
