- 2 boneless, skinless chicken breasts
- 8 oz pasta (e.g., fettuccine or penne)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes (chopped)
- 1/2 cup parmesan cheese (grated)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Sear the chicken in a large skillet with heated olive oil, seasoned with salt, pepper, and Italian seasoning, for about 5-7 minutes on each side until browned and cooked through. Remove and set aside.
- Sauté garlic and sun-dried tomatoes in the same skillet for 1-2 minutes until fragrant.
- Create the sauce by pouring in chicken broth and heavy cream, stirring to combine. Let simmer for about 5 minutes, then stir in parmesan cheese until melted and smooth.
- Combine the sliced chicken and cooked pasta back into the skillet, mixing well to combine everything evenly.
- Garnish with fresh basil and serve hot.
Notes
For a lighter version, substitute half-and-half for the heavy cream or add fresh spinach.
