Description

A delightful pasta dish featuring tender chicken, sun-dried tomatoes, and a rich creamy sauce that may inspire love at first bite.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (e.g., fettuccine or penne)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes (chopped)
  • 1/2 cup parmesan cheese (grated)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Sear the chicken in a large skillet with heated olive oil, seasoned with salt, pepper, and Italian seasoning, for about 5-7 minutes on each side until browned and cooked through. Remove and set aside.
  3. Sauté garlic and sun-dried tomatoes in the same skillet for 1-2 minutes until fragrant.
  4. Create the sauce by pouring in chicken broth and heavy cream, stirring to combine. Let simmer for about 5 minutes, then stir in parmesan cheese until melted and smooth.
  5. Combine the sliced chicken and cooked pasta back into the skillet, mixing well to combine everything evenly.
  6. Garnish with fresh basil and serve hot.

Notes

For a lighter version, substitute half-and-half for the heavy cream or add fresh spinach.
