Description

A creamy, flavorful chicken dish slow-cooked to perfection with sun-dried tomatoes, ideal for busy nights or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, garlic powder, salt, and pepper.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Stir in the Parmesan cheese about 30 minutes before serving.
  6. Serve the chicken with the sauce and garnish with fresh basil.

Notes

For extra flavor, marinate the chicken in Italian dressing for a few hours. Use a cornstarch slurry for a thicker sauce if desired.
