- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, garlic powder, salt, and pepper.
- Pour the mixture over the chicken in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Stir in the Parmesan cheese about 30 minutes before serving.
- Serve the chicken with the sauce and garnish with fresh basil.
Notes
For extra flavor, marinate the chicken in Italian dressing for a few hours. Use a cornstarch slurry for a thicker sauce if desired.
