Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or other low carb sweetener)
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar-free caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the dry ingredients: almond flour, cocoa powder, erythritol, baking soda, and salt.
  3. Whisk together the wet ingredients: melted butter, egg, and vanilla extract until smooth.
  4. Mix the wet and dry ingredients together until combined.
  5. Fold in the sugar-free caramel sauce, reserving a little for drizzling on top.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes until the edges are firm.
  8. Cool before drizzling with the remaining caramel sauce.

Notes

For added texture, consider adding nuts or sugar-free chocolate chips. Adjust sweetness by modifying the amount of erythritol.
