- 1/4 cup erythritol (or other low carb sweetener)
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar-free caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the dry ingredients: almond flour, cocoa powder, erythritol, baking soda, and salt.
- Whisk together the wet ingredients: melted butter, egg, and vanilla extract until smooth.
- Mix the wet and dry ingredients together until combined.
- Fold in the sugar-free caramel sauce, reserving a little for drizzling on top.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet.
- Bake for 12-15 minutes until the edges are firm.
- Cool before drizzling with the remaining caramel sauce.
Notes
For added texture, consider adding nuts or sugar-free chocolate chips. Adjust sweetness by modifying the amount of erythritol.
