- 8 oz pasta (fusilli or penne)
- 1 cup fresh basil, chopped
- ½ cup lemon juice
- ¼ cup olive oil
- 1 cup cherry tomatoes, halved
- 8 oz mozzarella balls
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to package instructions. Once done, drain and let cool.
- Combine the cooled pasta, chopped fresh basil, halved cherry tomatoes, and mozzarella balls in a large mixing bowl.
- Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. The flavors will meld even more as the salad sits.
