Description

A refreshing pasta salad bursting with flavor, combining lemon, fresh basil, cherry tomatoes, and creamy mozzarella, perfect for summer picnics and gatherings.


Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 cup fresh basil, chopped
  • ½ cup lemon juice
  • ¼ cup olive oil
  • 1 cup cherry tomatoes, halved
  • 8 oz mozzarella balls
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to package instructions. Once done, drain and let cool.
  2. Combine the cooled pasta, chopped fresh basil, halved cherry tomatoes, and mozzarella balls in a large mixing bowl.
  3. Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The flavors will meld even more as the salad sits.
