Description

A vibrant dish that transforms leftover chicken into Mediterranean-inspired gyros bowls with fresh vegetables and feta.


Ingredients

Scale
  • 150g cooked chicken
  • 1/2 tsp oregano
  • 1/2 tsp chili powder
  • 1 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1/4 cup chopped parsley
  • Black pepper to taste
  • 2 garlic cloves, minced
  • 1/2 pointed red pepper, chopped
  • 1/4 avocado, sliced
  • 1 cucumber, chopped
  • 1 tomato, chopped
  • 45 basil leaves, chopped
  • 3 radishes, sliced
  • 1/3 red onion, sliced
  • 1 tsp olive oil
  • Salt to taste
  • Feta cheese, crumbled
  • Olives

Instructions

  1. Shred the cooked chicken.
  2. Heat olive oil in a skillet over medium heat, then add the chicken and red pepper.
  3. Sprinkle in the oregano, paprika, black pepper, chili powder, and garlic. Stir for 2-3 minutes.
  4. Drizzle lemon juice over the mixture and remove from heat.
  5. Toss in the chopped parsley.
  6. Chop and combine cucumber, tomato, radishes, red onion, and basil with olive oil and salt.
  7. Assemble the bowl with chicken mixture on one side and salad on the other.
  8. Crumble feta cheese over the top and add olives.
  9. Serve immediately while fresh and flavorful.

Notes

Store leftovers in separate airtight containers in the fridge for 2-3 days.
