Description

A fun and convenient way to enjoy burrito flavors in a portable jar, perfect for meal prep.


Ingredients

  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Layer the ingredients in a large mason jar starting with the rice at the bottom.
  2. Add the black beans, corn, diced tomatoes, avocado, and cheese in layers.
  3. Drizzle salsa and lime juice over the top.
  4. Season with salt and pepper.
  5. Seal the jar and refrigerate until ready to eat.
  6. When ready to serve, shake gently to mix the ingredients or pour into a bowl.

Notes

To store, keep sealed in the refrigerator for up to three days. For fresh avocados, consume within one to two days.
