Ingredients

- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/2 cup shredded cheese
- 1/4 cup salsa
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Layer the ingredients in a large mason jar starting with the rice at the bottom.
- Add the black beans, corn, diced tomatoes, avocado, and cheese in layers.
- Drizzle salsa and lime juice over the top.
- Season with salt and pepper.
- Seal the jar and refrigerate until ready to eat.
- When ready to serve, shake gently to mix the ingredients or pour into a bowl.
Notes
To store, keep sealed in the refrigerator for up to three days. For fresh avocados, consume within one to two days.
