- 1 cup of rice
- 1 medium onion, chopped
- 2 cups of cabbage, shredded
- 2 tablespoons of olive oil
- 2 cups of vegetable broth or water
- Salt and pepper to taste
- 1 teaspoon of dried dill (optional)
- Juice of 1 lemon (optional)
Instructions
- Heat the olive oil in a large pot over medium heat until it shimmers.
- Add the chopped onion to the pot and sauté until it becomes translucent, about 5 minutes.
- Stir in the shredded cabbage and cook until it softens, about 3-4 minutes.
- Add the rice to the pot, stirring to coat it with the mixture.
- Pour in the vegetable broth (or water) and bring everything to a rolling boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.
- Season with salt, pepper, and optional dill, stirring gently to combine.
- Serve with a drizzle of fresh lemon juice for added flavor.
