Description

A comforting Greek dish that combines the earthy flavors of cabbage with hearty rice, perfect for any occasion.


Ingredients

  • 1 cup of rice
  • 1 medium onion, chopped
  • 2 cups of cabbage, shredded
  • 2 tablespoons of olive oil
  • 2 cups of vegetable broth or water
  • Salt and pepper to taste
  • 1 teaspoon of dried dill (optional)
  • Juice of 1 lemon (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the chopped onion to the pot and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the shredded cabbage and cook until it softens, about 3-4 minutes.
  4. Add the rice to the pot, stirring to coat it with the mixture.
  5. Pour in the vegetable broth (or water) and bring everything to a rolling boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.
  7. Season with salt, pepper, and optional dill, stirring gently to combine.
  8. Serve with a drizzle of fresh lemon juice for added flavor.
