Description

Deliciously rich and gooey keto-friendly cookies that satisfy your sweet tooth without the carbs.


Ingredients

Scale
  • 1 cup almond flour
  • 1 cup unsweetened cocoa powder
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the almond flour, cocoa powder, erythritol, and salt until well combined.
  3. Whisk the eggs, melted coconut oil, and vanilla extract until smooth and well mixed.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in sugar-free chocolate chips if desired.
  5. Scoop out tablespoons of dough and flatten each dough ball slightly on the prepared baking sheet.
  6. Bake for 10-12 minutes or until the edges are firm.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store any leftovers in an airtight container for up to three days or freeze for up to a month, layered with parchment paper to prevent sticking.
