- 1/2 cup unsweetened peanut butter or almond butter
- 1/4 cup coconut oil, melted
- 1/4 cup erythritol or another keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Combine the Dry and Wet Ingredients: In a mixing bowl, combine almond flour, peanut butter, melted coconut oil, erythritol, vanilla extract, and salt.
- Mix Until Smooth: Mix until thoroughly combined. If using, fold in the sugar-free chocolate chips until evenly distributed throughout the mixture.
- Scoop the Mixture: Scoop the mixture into small balls or molds and place on a parchment-lined baking sheet.
- Freeze for Firmness: Freeze for about 30 minutes, or until firm.
- Store for Enjoyment: Store in the refrigerator or freezer until ready to eat.

For nut-free versions, try using sun butter. To make scooping easier, slightly warm the mixture beforehand.
