Ingredients

  • 1/2 cup unsweetened peanut butter or almond butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup erythritol or another keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Combine the Dry and Wet Ingredients: In a mixing bowl, combine almond flour, peanut butter, melted coconut oil, erythritol, vanilla extract, and salt.
  2. Mix Until Smooth: Mix until thoroughly combined. If using, fold in the sugar-free chocolate chips until evenly distributed throughout the mixture.
  3. Scoop the Mixture: Scoop the mixture into small balls or molds and place on a parchment-lined baking sheet.
  4. Freeze for Firmness: Freeze for about 30 minutes, or until firm.
