Ingredients

  • 4 oz cream cheese, softened
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • Butter or coconut oil for frying

Instructions

  1. Mix the softened cream cheese, erythritol, vanilla extract, and cinnamon until smooth.
  2. Whisk the eggs in a separate bowl, then add almond flour and baking powder to form a batter.
  3. Heat a pan over medium heat and grease it with butter or coconut oil.
  4. Pour a small amount of the batter into the pan, forming a thin circle.
  5. Cook for 1-2 minutes until golden brown, then flip and cook the other side.
  6. Spread a layer of the cream cheese mixture on top of each cooked circle.
  7. Roll up the circle and repeat with the remaining batter.
  8. Serve warm with a sprinkle of cinnamon or keto-friendly sweetener on top.
