Description

Ingredients

  • 2 large eggs
  • 1 avocado, diced
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup spinach, sautéed
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Sauté the spinach in a skillet with a drizzle of olive oil over medium heat for 1-2 minutes until wilted, then set aside.
