Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion, garlic, and bell pepper. Sauté until softened.
- Add the Italian sausage, breaking it up with a spoon, and cook until browned.
- Stir in the rice, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until rice is cooked.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
