Instructions
- Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out some of the centers to create a boat-like shape.
- Mix the Filling: In a bowl, combine the cooked quinoa and marinara sauce with a sprinkle of salt and pepper.
- Stuff the Zucchini: Generously fill the hollowed zucchini halves with the quinoa and marinara mixture.
- Prepare the Instant Pot: Place the stuffed zucchinis upright in the Instant Pot and add a cup of water to the bottom.
- Cook the Zucchini: Close the lid securely, set your Instant Pot to manual high pressure, and cook for 5 minutes.
- Release the Pressure: Once the timer goes off, carefully quick-release the pressure.
- Add Cheese: Sprinkle the shredded cheese over the top of the zucchini boats while they are still warm.
