Description

A modern twist on classic stuffed bell peppers, made in the Instant Pot for a quick and flavorful meal.


Ingredients

Scale
  • 4 bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/2 cup water

Instructions

  1. Prepare the bell peppers by cutting the tops off and removing the seeds.
  2. Mix the filling with ground meat, cooked rice, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper.
  3. Stuff each bell pepper with the meat mixture.
  4. Prepare the Instant Pot by adding water for steaming.
  5. Arrange the stuffed peppers on a trivet in the Instant Pot.
  6. Seal the lid and cook on high pressure for 10 minutes.
  7. Release pressure naturally for 5 minutes, then do a quick release.
  8. Add cheese on top if desired and use sauté setting until melted.
  9. Serve hot for a delightful meal presentation.

Notes

Pair with a garden salad or crusty bread for a complete meal. Leftovers can be stored for up to 3 days in the fridge.
