A modern twist on classic stuffed bell peppers, made in the Instant Pot for a quick and flavorful meal.
Ingredients

- 4 bell peppers
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1/2 cup water
Instructions
- Prepare the bell peppers by cutting the tops off and removing the seeds.
- Mix the filling with ground meat, cooked rice, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper.
- Stuff each bell pepper with the meat mixture.
- Prepare the Instant Pot by adding water for steaming.
- Arrange the stuffed peppers on a trivet in the Instant Pot.
- Seal the lid and cook on high pressure for 10 minutes.
- Release pressure naturally for 5 minutes, then do a quick release.
- Add cheese on top if desired and use sauté setting until melted.
- Serve hot for a delightful meal presentation.
Notes
Pair with a garden salad or crusty bread for a complete meal. Leftovers can be stored for up to 3 days in the fridge.
