Instructions

- Crisp the chopped bacon over medium heat in a large ovenproof skillet until crispy, then set aside.
- Sauté the shallots in the skillet with olive oil for 5-7 minutes until caramelized.
- Drizzle honey over the shallots and season with salt and pepper.
- Roast in the oven for 15-20 minutes until tender and glazed.
- Combine the crispy bacon with the shallots in the skillet.
- Garnish with fresh thyme and serve warm.
