- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon dried hibiscus flowers, steeped in water
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a bowl, mix together the flour, powdered sugar, softened butter, and salt until crumbly.
- Press the mixture firmly into the bottom of the prepared baking dish.
- Bake the crust in the preheated oven for 15 minutes until lightly golden.
- Whisk together the eggs and granulated sugar in a separate bowl until frothy.
- Add the fresh lemon juice, steeped hibiscus tea, lemon zest, and baking powder; mix well to combine.
- Pour the lemon mixture over the baked crust, smoothing it out.
- Bake for an additional 20 minutes or until set.
- Let the bars cool down before dusting them with powdered sugar.
- Slice into squares and serve.
Notes
For best results, use fresh lemons and ensure butter is softened to room temperature.
