Description

Delightful Hibiscus Lemon Bars combining tangy lemon and floral hibiscus flavors with a buttery shortbread-like crust.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon dried hibiscus flowers, steeped in water
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix together the flour, powdered sugar, softened butter, and salt until crumbly.
  3. Press the mixture firmly into the bottom of the prepared baking dish.
  4. Bake the crust in the preheated oven for 15 minutes until lightly golden.
  5. Whisk together the eggs and granulated sugar in a separate bowl until frothy.
  6. Add the fresh lemon juice, steeped hibiscus tea, lemon zest, and baking powder; mix well to combine.
  7. Pour the lemon mixture over the baked crust, smoothing it out.
  8. Bake for an additional 20 minutes or until set.
  9. Let the bars cool down before dusting them with powdered sugar.
  10. Slice into squares and serve.

For best results, use fresh lemons and ensure butter is softened to room temperature.
