Description

A nutritious and delicious bowl featuring roasted sweet potatoes and perfectly cooked salmon, topped with fresh avocado and a zesty lemon drizzle.


Ingredients

  • 2 medium sweet potatoes, cubed
  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups baby spinach
  • 1 avocado, sliced
  • Lemon juice for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  3. Season the salmon fillets with salt and pepper. Heat a skillet over medium heat and cook the salmon for 4-5 minutes on each side or until cooked through.
  4. Layer the roasted sweet potatoes, baby spinach, and sliced avocado in a bowl. Flake the salmon on top.
  5. Drizzle with lemon juice before serving.

Notes
