A comforting twist on the classic shepherd’s pie, featuring lean meat, vibrant vegetables, and a creamy cauliflower topping.

Ingredients

Scale
  • 1 pound lean ground beef or ground turkey
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cups cauliflower, steamed and mashed
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup low-sodium beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add carrots and celery, cooking for about 5 minutes.
  4. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
  5. Stir in the peas, broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes.
  6. Spread the meat mixture into a baking dish.
  7. Top with the mashed cauliflower, spreading it evenly.
  8. Bake for 25-30 minutes, until the top is slightly golden.
  9. Garnish with fresh herbs and serve warm.

Notes

Consider pairing with a side salad and a glass of robust red wine or apple cider for a complete meal.
