- 1 lb ground lean turkey or beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup peas (fresh or frozen)
- 2 cups mashed sweet potatoes
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions, carrots, and celery; sauté until softened.
- Stir in minced garlic and cook for another minute.
- Add ground turkey or beef, cooking until browned.
- Mix in tomato paste, broth, peas, thyme, salt, and pepper; let simmer for 5-10 minutes.
- Transfer the meat mixture to a baking dish.
- Spread the mashed sweet potatoes on top of the meat mixture.
- Bake for 25-30 minutes, until the top is slightly golden.
- Let cool for a few minutes before serving.
Notes
For creamier sweet potatoes, add a splash of milk or butter. You can use other vegetables like corn or bell peppers for extra nutrition.
