Ingredients

- 1 cup lentils, rinsed
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the garlic and cumin and cook for another minute.
- Add the lentils, diced potatoes, and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils and potatoes are tender.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, include bay leaves while simmering. Adjust consistency with more broth if desired.
