Ingredients

- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup milk (or almond milk)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional add-ins: chocolate chips, nuts, or dried fruit
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas until they’re smooth and creamy, leaving no lumps behind.
- Add rolled oats, milk, honey, baking powder, baking soda, cinnamon, vanilla extract, and salt to the mashed bananas.
- Mix all the ingredients together until combined.
- Fold in your choice of chocolate chips, nuts, or dried fruit into the batter.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These muffins are ideal warm and can be stored in an airtight container for up to three days. For longer storage, wrap and freeze for up to three months.
